Toscakaka (Tosca cake) is a much loved cake in Sweden. This recipe has been passed down through Kristina Karlsson’s family for generations. Serve it at your next dinner party or celebration and enjoy this Swedish treat.
INGREDIENTS
• Breadcrumbs or crushed cracker
• 3/4 cup plain flour
• 1 tsp baking powder
• 2 eggs
• 2/3 cup sugar
• 1/2 cup melted butter
• 1/4 cup full cream milk
FOR THE GLAZE
• 1/2 cup sugar
• 2 tbsp plain flour
• 1/2 cup butter
• 2 tbsp full cream milk
• 2/3 cup sliced almonds
1 Preheat your oven to 180°C/356°F.
2 Prepare your cake tin by greasing with butter and sprinkling with breadcrumbs or crushed crackers.
3 In a bowl, sift together the plain flour and baking powder.
4 In a separate bowl, beat the eggs and sugar until light and fluffy.
5 Add the eggs and sugar to the flour mix, then fold through the melted butter and milk. Once combined, transfer to your prepared cake tin.
6 Bake in the oven for about 20–25 minutes.
7 While your cake is baking, make your glaze. Combine the sugar, flour, butter and milk in a small saucepan over medium heat.
8 Stir continuously until the mixture begins to bubble, then add the sliced almonds. Continue stirring for a few minutes until the mixture thickens. Remove from the heat.
9 Once your cake is set, remove from the oven and spread the glaze over the top.
10 After you’ve added the glaze, place your cake back in the oven and continue baking until the glaze turns a golden brown, about 10–15 minutes. Let it cool in the pan before removing and serving!
