It’s almost Christmas, which means it’s the perfect time to enjoy baking delicious festive treats to share with family and friends. To help you celebrate in Swedish style, discover our simple Knäck (Swedish for toffee) recipe.
Ingredients
300 ml / 1 cup heavy cream
200 g/ 1 cup sugar
100 ml / 1/3 cup Swedish light syrup
3 tbsp butter
125 g / ½ cup finely chopped almonds
Method
Combine the cream, syrup, sugar and butter in a large, heavy pot over a low heat. Bring the mixture to simmering, until the butter has melted. Stop stirring and allow to simmer away on a low heat for 30 minutes before taking off the heat and folding in the almonds. Allow to cool slightly. Place wrappers on a baking sheet and slowly add mixture being very careful as hot sugar can burn if it touches your skin. You should be especially careful around children, keeping them well out of the way for the whole process.
