To inspire you to get started we asked our New Zealand based Workshop Consultant Kim Yong to share her 5 top wedding planning tips. Don’t forget that you can also book into our inspiring Wedding Workshop for more organising tips and inspiration.
1. Create a vision board to collate all your ideas and inspiration. A physical vision board is great for a hands-on, creative bride or groom-to-be. Photos, magazine cut outs and to do lists are just a few of the things you could post on your vision board.
Or if you’re more tech savvy, Pinterest is an amazing app that you can take everywhere with you on your phone. You can create a board for each area of your wedding; from the venue to your wedding dress/suit, and wedding favours to flowers.
2.Ask for help.
You don’t have to do everything! Remember that you can always ask others for help and delegate items on your to do list. Asking for help means that you can focus more time and energy on what matters most to you.
3. Get yourself a wedding planner or folder.
Having a planner or folder dedicated to your wedding will reduce your stress by having all your information, bookings and lists in one place. Our Wedding Notes book is the perfect tool to get you organised, with tabs and lists covering everything you need to plan your dream wedding.
4. When making tough decisions, go with your gut.
Planning a wedding is stressful and when you overthink, or are indecisive, your stress levels increase. If in doubt, always go with your gut feeling and don’t forget that the best moments are the ones you don’t plan!
5. Take some time out to recharge. When planning your wedding, make sure to also plan some me time leading up to the big day. A relaxing massage, a day to yourself or even 15 minutes to read your favourite book will help you to slow down and be mindful. Our workshops are also a wonderful way for you to take some time out for yourself.
Mother’s Day is the perfect time to get creative in the kitchen and make something homemade. Mum will love how much effort you’ve put into her gift, plus you can eat the results together! What could be better than that?
Spiced Dark Chocolate Meringues topped with Vanilla Yoghurt Cream, Fresh Berries, Edible Flowers & Golden Chocolate Hearts
4 egg whites
1 cup caster sugar
1 tbs lemon juice
1 tbs vanilla paste
100g dark chocolate, melted & slightly cooled
½ tsp ground cinnamon
½ tsp allspice
300ml fresh whipping cream
250ml natural greek yoghurt
1 tbs vanilla paste or extract
Fresh berries – strawberries, raspberries, blackberries
Edible flowers (optional) or fresh mint leaves
Preheat your oven to 150 degrees Celsius (300F).
Whip the egg whites in a large clean bowl using a stand mixer, hand beaters, or whisk by hand. Whip the egg whites until stiff peaks form. Gradually add the castor sugar to the egg whites (whipping the whole time) by adding 1 tablespoon at a time.
Once all of the sugar is incorporated add the vanilla and beat the egg whites for a further 5 minutes. Next add the lemon juice to the egg white mixture and beat for a further 2 minutes. The final egg white mixture should be thick and glossy. When you rub the mixture between your fingers there shouldn’t be any grit from the sugar. If there is whip for a few more minutes to ensure all of the sugar has dissolved.
Line two baking trays with baking paper. Scoop the meringue into small mounds on the trays. Depending on the size you want the meringues there should be about 6-8 in total. Make a little well in the centre of the meringue mounds. Drizzle about a tablespoon of melted chocolate into the well.
Sprinkle a dusting of cinnamon and allspice over each of the meringues. Using a butter knife or spoon swirl the chocolate and spices into the meringues. Place the trays into the pre-heated oven and lower the temperature to 120 degrees Celsius (250F). Bake for 1 hour and 45 minutes. Turn the oven off and leave the meringues in the oven with the door closed to completely cool. Leaving them overnight is a great way to ensure they are completely cooled.
Remove the meringues from the oven. Whip the cream, yoghurt and vanilla together until soft peaks form. Assemble the meringues by topping with a dollop of the yoghurt cream, fresh berries, chocolate, and edible flowers or fresh mint.

We caught up with Christine to find out more about her, her mum and her inspirations…
Why do you love getting creative with your gift wrapping? I am a firm believer that packaging matters just as much as the things inside the box or bag. The presentation of the gift is part of the whole gift giving experience and that experience is a physical representation of our love, thoughts, and appreciation.
When you care about someone, you want the best for them and even if you don’t define yourself as creative, it’s the effort that is the real gift.
What lessons did your mum pass on to you that you value the most? As a child I had the blessing and opportunity to eat an array of different foods because my parents cooked very often. And depending on how I felt or the weather, my mom would cook specific foods that could aid me or coincide with the moment. For example, the extract of a lime peel is used to help with cold symptoms, so my mom would steam the peel and we’d drink the infused water as medication. It actually works! From this, I learned that food has a purpose greater than taste.
And so, the one greatest lesson that was instilled within me was to take care of my health and body by being aware of the things I eat. We only have one body and one life, so I want to live it the best I can.
What’s one thing you want to say to your mum this Mother’s Day? You are strong, beautiful, intelligent, and simply unique no matter what anyone says. I am lucky to have you as my mom and I hope I can be just as strong and courageous as you.
How does your daily routine help you stay creative? No matter what kind of day I am having, I find that staying active helps me to stay creative. I probably browse the internet way too much and although it seems like the perfect way to find inspiration, it does the complete opposite. I am most inspired while my mind is focused on a challenge unrelated to my current projects.
I also love 20 minute breaks because they allow me to process what I’ve done, the things I’ve learned, and what steps I need to take next.
What kikki.K stationery item can you not live without? Everything this brand has ever made is simply adorable but I have to pick the paper clips! With the amount of paper that I use daily, these are the perfect way to stay organised and still be stylish!
What’s one dream you’d still love to achieve? My dream is twofold. I would love to build a stationery brand that can also bring awareness to the amazing works of people helping the world. For example, there is a small thrift store in town that donates $1000 to women who are undergoing breast cancer treatment. My goal would be to create artwork that is inspired by their achievements, in my style, and then to donate a portion of the profits back towards their cause. Which then brings awareness to their movement. It’s a very dynamic dream but I am excited to put in my best effort!
From the achievement, I hope to be able to buy my mom a good house and give her the life that she deserves. I want her to able to live the rest of her life without worry and with many more adventures!
